This Recipe was made on the theme “Creativity Unlimited with Millet Flour” for the first round of the recipe contest organized jointly by PFNDAI and Roquette in January 2022.
Ingredients-
- 200gm millet flour
- 1 egg
- Water
- Cherry tomatoes
- Spinach
- Garlic
- Heavy cream
- Olive oil
- Cheese
- Mixed herbs
Method of Preparation-
- Preparation of dough:
- Take 200gm of millet flour
- Add 1 whole egg & few drops of water
- Make soft dough & let it rest for 1 hour
- Roll the dough & cut out long strip
- Boil water and few drops of olive oil
- Boil the prepared pasta strips for 10 minutes
- Sauce Preparation-
- Take a pan and add few drops of olive oil
- Shallow fry the cherry tomatoes
- Take pan and add spinach, few garlic cloves & Water
- Boil it till it become perfectly soft
- Make fine paste of boiled spinach
- Final Pasta-
- In pan add few drops of olive oil
- Add the spinach paste, some heavy cream, 2 cheese slice, Fried cherry tomatoes and mix herbs and stir
- Millety spinach pesto is ready
